What's Actually Causing Those Flakes — and an Honest Look at Whether Tallow Helps

I want to do something a little different with this post. Most of what we write here ends with "and here's how our tallow products genuinely help." This one doesn't end quite that cleanly, and I think that's actually more useful to you than if it did. Dandruff turns out to be a condition where the honest, evidence-based answer is more nuanced than a simple product recommendation — so let's actually go through the real science first.
MEET THE MICROBE BEHIND MOST DANDRUFF
The scalp has its own microbiome, just like the gut and the rest of your skin, and one resident in particular is usually the main character in the dandruff story: a yeast called Malassezia, most often Malassezia globosa. It lives on essentially everyone's scalp, all the time, as a completely normal part of a healthy scalp ecosystem.
The problem isn't Malassezia's presence — it's what happens when conditions favor its overgrowth. Malassezia feeds on sebum, the natural oil your scalp produces, breaking certain fatty acids down into a byproduct called oleic acid. Here's the twist: oleic acid itself isn't inherently harmful, but roughly half the population has a sensitivity to it. In those people, oleic acid triggers irritation and inflammation, which pushes the scalp to shed skin cells far faster than normal — a healthy scalp's cell cycle runs about a month, while a dandruff-affected scalp can cycle in a matter of days. Those visibly clumped, faster-shed skin cells are the flakes you actually see.
Newer research has also started implicating scalp bacteria alongside the yeast, suggesting the full picture involves an imbalance across the whole scalp microbiome, not just one organism acting alone — which, if it sounds familiar, is exactly the same "imbalance, not invasion" story we've told about the gut and about rosacea on this blog.
NOT ALL FLAKES ARE THE SAME FLAKES
Here's a distinction that gets lost in almost every mainstream conversation about dandruff: true, Malassezia-driven dandruff and simple dry-scalp flaking are not the same condition, even though they can look nearly identical in the mirror.
Malassezia-driven dandruff tends to come with oilier flakes, some itchiness, and often responds specifically to antifungal treatment. Straightforward dry scalp — from cold weather, low humidity, hot showers, or an over-stripped barrier — produces smaller, drier flakes without the same yeast-driven inflammatory component, and tends to respond to moisture and gentler products rather than antifungal treatment.
This distinction matters enormously for what actually helps, which brings us to the part of this post I want to be very upfront about.
THE HONEST PART: WHAT TALLOW'S FATTY ACID PROFILE ACTUALLY MEANS HERE
Research on Malassezia has identified something specific: the yeast can only metabolize fatty acids within a certain carbon chain length range, roughly C11 to C24, and it particularly thrives on palmitic acid and oleic acid. Short-chain fatty acids below that range, like the caprylic and capric acid found in fractionated coconut (MCT) oil, are essentially indigestible to it.
Beef tallow's fatty acid profile is roughly 37-46% oleic acid and 24-32% palmitic acid — close to the exact fatty acids the research identifies as Malassezia's preferred fuel. When I first drafted this post, I treated that as a reason for caution across all our tallow products, our Shampoo Bar included. Looking specifically at our actual Shampoo Bar formula, I need to walk that back — because the chemistry here is genuinely different, and the distinction matters.
Our Shampoo Bar is a true, lye-saponified soap, made with tallow, olive oil (infused with nettle and mallow), coconut oil, castor oil, and beeswax, combined with water and lye through real cold-process soapmaking. Saponification isn't just mixing oils together — it's a chemical reaction that converts the original fat molecules (triglycerides) into an entirely different substance: soap, plus glycerin. Once tallow becomes sodium tallowate through this reaction, it behaves as a surfactant that lifts away and rinses off, not as a lipid sitting on the skin the way it does in a leave-on balm. Contact time matters enormously too — a shampoo bar is on your scalp for roughly 30-90 seconds before being rinsed away, compared to hours for a leave-on product.
Skincare experts who specialize in "Malassezia-safe" formulating generally agree that rinse-off products carry meaningfully lower risk than leave-on ones for exactly these reasons — though they're also honest that it isn't zero risk, since a small amount of unreacted oil (called "superfat" in soapmaking, intentionally left in for conditioning) and any residue left behind at the hairline can still carry some feeding potential. Our formula does include coconut oil and olive oil alongside tallow, both of which get named in Malassezia-focused skincare guidance as oils to be cautious with in leave-on contexts.
My honest, updated read: thanks to saponification and the short 30-90 second contact time, our Shampoo Bar is a reasonable choice even for an active, yeast-driven flare — but it isn't a zero-risk, "Malassezia-safe by design" formula either, since a cold-process soap does retain a small amount of unsaponified oil for conditioning. If you're in the middle of a confirmed yeast-driven flare, an actual antifungal shampoo is still the more targeted first move; once things are calm, I feel genuinely good about our Shampoo Bar as a gentle, sulfate-free maintenance option.
WHERE TALLOW GENUINELY MAKES SENSE — AND WHERE TO BE MORE CAREFUL
Our Shampoo Bar — being saponified soap, not a leave-on oil — is a reasonable choice for both dry-scalp flaking and as a gentle washing step alongside antifungal treatment during an active yeast flare, since it cleanses rather than coats. Its sulfate-free formula also avoids the harsh stripping that can trigger the scalp to overproduce oil in response, which paradoxically makes some dandruff worse over time. The nettle and mallow infused into the olive oil, plus the added clay and aloe powder, are also genuinely nice inclusions here — nettle has a long folk history in hair and scalp care, clay helps gently draw out excess oil, and aloe adds a soothing, hydrating quality without adding more fatty acid load.
Our leave-on hair products — the Luxe Hair Elixir and Luxe Bun Bar — are where the same caution actually applies, since these are the products that genuinely stay on hair and scalp for extended periods, unlike the shampoo bar's quick rinse-off. I want to walk through these honestly rather than wave past them.
The Hair Elixir is built on sunflower, amla, jojoba, and argan oils, plus castor oil. The Bun Bar shares a similar base — castor, amla, jojoba, and sunflower oils, set with beeswax and shea butter. Neither is saponified; both are true leave-on oil blends, applied directly to hair and, especially with the Elixir, worked toward the scalp itself.
Being straightforward about the fatty acid profile here: sunflower, argan, and castor oil are all commonly named in Malassezia-focused skincare guidance as oils capable of feeding the yeast. Jojoba is the interesting exception — it's technically a liquid wax ester rather than a true oil, chemically different from the others, and the evidence on whether Malassezia can use it is genuinely mixed rather than clearly settled either way, whatever marketing claims you might see elsewhere.
My honest read: if you're in the middle of a confirmed, active yeast-driven flare, I'd focus these two products on the hair shaft itself rather than massaging them into the scalp, and lean on your antifungal shampoo for the scalp specifically until things calm down. For everyday use, dry-scalp-driven flaking, or once a flare is under control, both are lovely, effective products doing exactly what they're designed to do — this caution is specific to active fungal flares, not a reason to avoid them generally.
If you're dealing with active, yeast-driven dandruff, the evidence-based move is still to address the Malassezia population directly first, with an antifungal shampoo or a well-diluted tea tree approach, using our Shampoo Bar as your gentle daily cleanser alongside that treatment rather than instead of it. Once things are calm, it's a genuinely solid choice as your ongoing maintenance shampoo.
Tea tree oil has real trial evidence behind it specifically for dandruff. A landmark randomized controlled trial (Satchell et al., published in the Journal of the American Academy of Dermatology) tested a 5% tea tree oil shampoo against placebo in 126 patients over four weeks, finding a 41% improvement in dandruff severity compared to just 11% in the placebo group — a statistically significant, well-tolerated result. The mechanism is well understood too: terpinen-4-ol, tea tree oil's primary active compound, disrupts the cell membranes of Malassezia directly.
Here's a nice detail worth pointing out: our Shampoo Bar's essential oil blend already includes tea tree oil, alongside rosemary, peppermint, and lavender. I want to be honest about the concentration, though — the amount of tea tree oil in our formula works out to a small fraction of the batch, nowhere near the 5% concentration used in the clinical trial, since it's one of four essential oils sharing a modest total addition across a full batch of bars. So this isn't a substitute for a dedicated 5% tea tree treatment shampoo during an active flare — but it's a genuinely nice, real bonus rather than just a nice smell, and one more reason our Shampoo Bar is a reasonable everyday choice even for scalps prone to yeast-driven flaking.
Zinc pyrithione, ketoconazole, and selenium sulfide — the actives in most conventional medicated dandruff shampoos — also have strong evidence behind them, just wrapped in formulas that often carry the sulfates and synthetic fragrance we generally steer people away from for other reasons.
THE DIET CONNECTION
If any of this is ringing a bell from our Grain Rabbit Hole post, it should — some research suggests that high-sugar, high-refined-carbohydrate diets may promote yeast overgrowth more broadly in the body, Malassezia included. It's not a guaranteed fix on its own, and I won't oversell it, but it's a reasonable thread to pull if dandruff keeps returning despite a solid topical routine.
THE ACTION PLAN
This isn't medical advice — persistent or severe dandruff is worth a dermatologist's actual diagnosis, especially to rule out seborrheic dermatitis or another underlying condition.
Step 1: Figure out which kind you're dealing with. Oily, itchy, inflamed flaking points toward Malassezia. Dry, tight, smaller flaking without much irritation points toward simple dehydration.
Step 2: If it's yeast-driven, address that directly first, with a zinc pyrithione, ketoconazole, or selenium sulfide shampoo, or a well-diluted tea tree approach, used consistently for several weeks.
Step 3: If it's yeast-driven, use a gentle, non-stripping cleanser alongside your antifungal treatment — our Shampoo Bar, being a true saponified soap rather than a leave-on oil, is a reasonable washing step here, precisely because it rinses away rather than sitting on the scalp.
Step 4: Be more cautious with leave-on hair oils during an active flare — this is where the Luxe Hair Elixir and Bun Bar warrant more thought specifically on the scalp itself, since extended contact time gives Malassezia more opportunity to access those fatty acids; focusing them on the hair shaft rather than the scalp during a flare is a reasonable middle ground.
Step 5: Take a look at sugar and refined carbs if dandruff is a recurring, stubborn pattern despite good topical care.
THE REAL TALK
Saponification and a 30-90 second rinse fundamentally change the equation compared to a product that sits on your skin for hours. So while I won't tell you our Shampoo Bar cures dandruff, and I still think a real antifungal treatment is the right first move for an active yeast flare, I can honestly tell you it's a reasonable, gentle cleanser to use right alongside that treatment — not something to set aside until the flare passes.
