I talk about this at the farmers market more than almost anything else. People find me with eczema, with bloating, with unexplained rashes, with energy that's been missing for years. And more often than not, the conversation ends up in the same place:

What are you eating?

Skin health is inside out. The products you put on your body matter enormously — and we'll get to that. But no amount of grass-fed tallow will fully overcome a gut that's been chronically disrupted. Your skin is a messenger. It's telling you something your gut has been trying to say for a while.

And in America, the gut disruption often starts with something so basic, so daily, so completely normalized that most people never question it.

Grains.


Eczema Is a Gut Issue

Let's start here, because this is the part most people — including most dermatologists — haven't fully reckoned with yet.

The gut-skin axis is a bidirectional communication system between your gastrointestinal tract and your skin. What happens in your gut doesn't stay in your gut. Numerous dermatological disorders, such as rosacea, psoriasis, atopic dermatitis, and acne vulgaris, have been linked to dysbiosis in the gut microbiota.

Atopic dermatitis — eczema — is not just a skin condition. It is a manifestation of systemic immune dysregulation that originates, in significant part, in the gut. The skin is often the first visible symptom of an internal problem. When we treat eczema only with topical interventions — even good ones — we are treating the messenger, not the message.

The message is coming from your gut. And in America, one of the most common sources of gut disruption is something sitting in your bread basket.


The Gluten Confusion — and Why You're Probably Wrong About What's Wrong

Here is a conversation I have constantly:

"I think I have a gluten problem."

Maybe. But probably not in the way you think.

True celiac disease — an autoimmune condition where gluten triggers intestinal damage — affects approximately 1% of the population. Non-celiac gluten sensitivity is real and more widespread. But the epidemic of grain-related gut problems in America is almost certainly not primarily a gluten problem.

It's a processing problem. A chemical problem. A fortification problem. And the difference matters — because if you've been avoiding gluten when the real culprit is something else entirely, you may be managing symptoms without ever addressing the cause.

The historical bread story:

Traditional bread was made through long, slow fermentation. A sourdough loaf might ferment for 24-72 hours, during which lactic acid bacteria break down not just gluten proteins but also FODMAPs, amylase-trypsin inhibitors (ATIs), and phytic acid — compounds that cause digestive distress for many people. Researchers studying non-celiac wheat sensitivity now describe it as "non-gluten wheat sensitivity" because gluten itself does not appear to be the primary trigger for most of these individuals. The improved tolerance people experience with sourdough likely comes from this combination of lower FODMAPs and reduced ATIs, with partial gluten breakdown playing a supporting role.

A 72-hour fermented sourdough can reduce FODMAP content by up to 91%. The bread our great-grandparents ate was, in a very real sense, pre-digested by beneficial bacteria before it ever reached their mouths.

Modern mass-produced bread is made in hours. The fermentation step that made bread digestible for most people across most of human history has been industrialized out of existence. And then we blamed gluten.

A sidenote on yogurt — because we've done this everywhere:

The same industrial shortcut that ruined bread has ruined yogurt. Most people believe store-bought yogurt is a probiotic powerhouse — and the marketing certainly suggests it. Millions of cultures! Live and active! The numbers sound impressive.

But real yogurt — traditionally fermented over days, not hours — develops a microbial complexity and density that mass-produced yogurt doesn't come close to. Commercial yogurt is typically fermented for 4-8 hours with one or two bacterial strains, then loaded with sugar, fruit concentrates, and stabilizers to extend shelf life and improve palatability.

Traditional yogurt fermented over 24-48 hours develops dozens of bacterial strains in numbers that dwarf the commercial product — and with far less sugar, because the bacteria have had time to consume it. The yogurt that supported human gut health for millennia was sour, thin, alive, and nothing like the sweetened cups in your grocery store dairy aisle.

If you're eating commercial yogurt for the probiotic benefit, you may be getting far less than you think — and a meaningful amount of sugar along with it. Seek out traditionally made yogurt, kefir fermented for 24+ hours, or make your own. The difference is real.


The Real Problems With American Grains

What's actually happening in American grain production is more complex — and more alarming — than the gluten conversation acknowledges.

1. Glyphosate: In Everything, Including Your Body

Glyphosate is the active ingredient in Roundup, the world's most widely used herbicide. It was developed specifically to work with GMO crops engineered to resist it — and its use has increased dramatically since those crops were introduced.

Here's how glyphosate kills weeds: it inhibits an enzyme called EPSPS in the shikimate pathway — a biological mechanism responsible for the synthesis of essential aromatic amino acids in plants and microorganisms. Block this enzyme and the plant starves of the amino acids it needs to survive.

Here is the critical point that the industry uses to argue for its safety: humans don't have a shikimate pathway. Glyphosate can't directly inhibit our own enzymes. And technically, this is true.

But our gut bacteria do.

Glyphosate inhibits EPSPS in the shikimate pathway, disrupting the production of the aromatic amino acids tryptophan, tyrosine and phenylalanine in gut bacteria. Pathogenic bacteria such as E. coli and Salmonella showed significantly higher resistance to glyphosate compared to host-associated commensal bacteria. One study examining glyphosate sensitivity found that 54% of bacterial species commonly found in the gut were sensitive to glyphosate, while pathogenic strains showed much higher resistance.

Read that again. Glyphosate preferentially kills your beneficial gut bacteria while leaving pathogenic bacteria relatively unharmed. It is, in effect, a selective antibiotic — one that you are consuming daily through your food supply, and that systematically advantages the harmful organisms in your gut over the beneficial ones.

Past research has demonstrated the sensitivity of many gut resident microbes, including beneficial bacteria like Lactobacillus and Bifidobacterium, to glyphosate. These are among the most important organisms in your gut microbiome — the bacteria responsible for immune regulation, barrier integrity, mood regulation, and skin homeostasis.

Glyphosate has been found in human blood, urine, and breast milk. It has been classified as a probable human carcinogen by the International Agency for Research on Cancer. It is on your food. It is in your body.

A critical note on wheat specifically:

Most people know glyphosate is used on GMO crops. Fewer people realize it's also used extensively on conventional non-GMO wheat — including wheat that's not genetically modified — as a pre-harvest desiccant. This means glyphosate is sprayed directly on wheat crops just before harvest to dry them out and speed up the harvesting process. The wheat absorbs the glyphosate as it dies. This is why conventional wheat flour in America regularly tests positive for glyphosate residues at levels that have alarmed independent researchers — not because the wheat is GMO, but because it was literally bathed in herbicide in its final days before becoming your bread.

This practice is widespread in American agriculture. It is not used in the same way in most European countries — which is part of why the same person who reacts to American wheat can eat French bread without issue.

The courts are catching up:

This is not a fringe concern or a conspiracy theory. The legal and financial reckoning for glyphosate's manufacturer is well underway — and the numbers are staggering.

Approximately 170,000 Roundup lawsuits have been filed against Bayer, which acquired Monsanto in 2018. Bayer has paid out nearly $11 billion in settlements to date and has set aside an additional $16 billion to resolve remaining and future claims. In early 2026, a judge gave preliminary approval to a $7.25 billion class settlement.

The jury verdicts speak for themselves:

  • April 2025: A Georgia jury ordered Bayer to pay over $2 billion to a man who developed non-Hodgkin's lymphoma after using Roundup for 20 years
  • May 2025: A Missouri appellate court upheld a $611 million verdict against Monsanto
  • November 2025: A California appeals court affirmed a $28 million verdict for a man who developed non-Hodgkin's lymphoma after decades of use
  • October 2024: A Pennsylvania jury awarded $78 million to a man who developed non-Hodgkin's lymphoma after Roundup use between 1992 and 2020
  • January 2024: A $2.25 billion verdict for a 45-year-old Pennsylvania man diagnosed with non-Hodgkin's lymphoma after nearly 20 years of residential Roundup use

Bayer continues to "stand fully behind the safety" of its glyphosate-based herbicides. The EPA's position is that glyphosate is not likely carcinogenic. The International Agency for Research on Cancer classifies it as a probable human carcinogen. The courts have repeatedly sided with the people getting sick.

This is the substance on your food. On organic American food too.

And organic American grains are not safe either.

This is the part people don't want to hear. Organic certification prohibits the direct application of glyphosate — but it cannot protect against the drift and contamination that is now endemic in American agricultural regions. Fields are not islands. Glyphosate is persistent in soil and water. Independent testing of organic grain products in the US has found measurable glyphosate contamination regularly. American organic is better than conventional, but it is not clean.

2. GMO Grains and the Unknown Long-Term Experiment

The GMO crops that dominate American grain production were engineered specifically to work with glyphosate — to resist the herbicide that kills everything else. They are, by design, glyphosate-dependent crops.

We have been consuming these crops for approximately 30 years. The long-term effects on human health remain genuinely unknown. The research needed to answer this question definitively — multigenerational human studies at population scale — doesn't exist and may never exist. We are, whether we chose to be or not, participants in an uncontrolled experiment.

What we do know: GMO crops cannot be meaningfully separated from the herbicide system they were developed for. Choosing GMO grains means choosing glyphosate exposure. They are the same problem.

3. The Fortification and Enrichment Deception — and the Gene Mutation Nobody Is Talking About

Second only to the glyphosate immersion, this is the point that matters most to me as a holistic nutritionist — and the one most likely to directly explain symptoms you or your children are experiencing right now.

When grains are processed into flour and other food products, they are stripped of their natural nutrient profile. The germ and bran — the parts of the grain that contain vitamins, minerals, fiber, and essential fatty acids — are removed. What remains is the endosperm: mostly starch, mostly empty.

To compensate, manufacturers "enrich" and "fortify" their products — adding back synthetic approximations of the nutrients they just removed. Iron, B vitamins, and most importantly folic acid.

Is fortification actually required by law?

This is a nuanced answer worth understanding. The FDA made a decision in the 1940s that it would not require mandatory fortification for any food product outright — this policy is technically still in place. However, the practical reality is more complicated.

The FDA uses "standards of identity" — regulations that define what a food product must contain to be labeled a certain way. Any flour or bread product labeled as "enriched" must contain specific amounts of thiamin, riboflavin, niacin, iron, and folic acid per FDA regulation. In 1998, the FDA began a mandatory folic acid fortification program requiring folic acid in all enriched cereal grain products that have a standard of identity — including bread, rolls, wheat flour, corn meal, rice, and pasta.

Manufacturers are not technically required to enrich their products — unenriched versions exist for every enriched standard. But in practice, the vast majority of commercially produced grain products in the US use enriched flour. The result: while enrichment is technically voluntary, the American food supply is saturated with it. The folic acid in enriched grains is not a choice most consumers knowingly make — it's the baseline assumption of virtually every commercially produced bread, pasta, cereal, and baked good in the country.

Unenriched flour exists. It's available. It just requires specifically seeking it out — which most people don't know to do, because nobody told them they should.

Here is what you need to understand about folic acid: it is not folate.

Folate is the naturally occurring form of vitamin B9 found in food — in leafy greens, legumes, liver, and in whole, unprocessed grains. Your body knows exactly what to do with it.

Folic acid is the synthetic version. It requires a conversion step in your body before it can be used — a process that depends on an enzyme produced by the MTHFR gene.

Estimates suggest that up to 44% of the population has an MTHFR mutation. 44% of the population can't process folic acid well, or not at all, and we're enriching and fortifying the food supply with synthetic folic acid for 100% of us.

Let that land. Nearly half the population has a genetic variation that impairs their ability to convert synthetic folic acid into a usable form. For people with this mutation, unmetabolized folic acid accumulates in the bloodstream rather than being converted and used. The effects cascade through multiple systems:

Mood and mental health: If the MTHFR gene is mutated, it cannot produce the enzyme correctly, disrupting the production of serotonin and dopamine — key players in ADHD, autism, and mood disorders. The malformation of the MTHFR gene causes the body to change folate into methylfolate at a reduced capacity — as low as 10% for homozygous and 50% for heterozygous individuals.

ADHD and children specifically: Research shows that approximately 40% of the population has a mutation in one or more of the genes that produce the MTHFR enzyme. Individuals with such variants face difficulties processing synthetic folic acid, leading to limited production of methylfolate — the active form needed for DNA synthesis, detoxification, neurotransmitter synthesis, and energy metabolism.

This is where parents of children with ADHD, focus issues, behavioral challenges, or unexplained skin conditions need to pay particular attention. It explains why mood and behavior can worsen when a child takes an ordinary multivitamin containing folic acid — or even eats fortified cereals at breakfast. The very products marketed as healthy choices for children may be actively working against children who carry MTHFR mutations. And since 40%+ of the population carries at least one variant, this is not a rare edge case.

If your child has unexplained behavioral, neurological, or skin symptoms and you've tried everything — MTHFR testing is inexpensive and could change everything. Talk to a functional medicine practitioner about testing and about switching to methylfolate rather than folic acid in any supplements.

Children's vitamins almost universally contain folic acid. Fortified cereals — the ones marketed specifically to children with cartoon characters and vitamin claims — are among the highest sources of synthetic folic acid in the American diet. These are worth specifically avoiding for children with any MTHFR concern.

Gut health: Unmetabolized folic acid adds to the toxic burden on the liver and digestive system — the very systems responsible for breaking down and eliminating the other toxins we've already discussed. It's not one problem. It's compounding problems.

Skin: When the liver is overburdened, the skin compensates as a secondary detox organ. Unexplained rashes, eczema flares, persistent inflammation — these can all be downstream expressions of a gut and liver under chronic chemical stress.

People with MTHFR mutations have a harder time converting folic acid into its usable form and actually experience worsened symptoms from taking supplements containing folic acid. Many people have no idea that they carry an MTHFR mutation gene that contributes to their symptoms.

This is not a fringe concern. This is a genetic reality affecting potentially half the population, interacting daily with a food supply that has been fortified with a synthetic nutrient their bodies cannot properly process.


Leaky Gut: The Missing Piece

We've talked about glyphosate disrupting your beneficial gut bacteria, GMO exposure, and synthetic nutrients accumulating in a liver that can't properly process them. But there's a mechanism that connects all of these to your skin — and it has a name.

Leaky gut. Scientifically: intestinal hyperpermeability.

Your gut lining is a single layer of cells — a remarkably thin barrier between the contents of your digestive tract and your bloodstream. Under healthy conditions, this barrier is selectively permeable: it allows nutrients through while keeping undigested food particles, bacteria, and toxins contained.

When the gut microbiome is disrupted — by glyphosate, by chronic antibiotic exposure, by a diet high in processed foods, by stress, by synthetic food additives — the tight junctions between those gut lining cells begin to loosen. Gaps open. Things that should stay in your gut start leaking into your bloodstream.

Undigested food proteins. Bacterial fragments. Toxins. Inflammatory molecules.

Your immune system, encountering these things in circulation, mounts a response. That response is systemic inflammation. And systemic inflammation manifests in many places — but one of the most visible is your skin.

Eczema, rosacea, psoriasis, unexplained hives, chronic acne — all have connections in the research to intestinal hyperpermeability. This is why treating the skin alone rarely resolves these conditions long-term. The fire is in the gut. The smoke is on the skin.

Glyphosate specifically has been researched for its potential role in promoting intestinal permeability — adding another mechanism by which the herbicide on your food may be contributing to the skin condition you've been treating topically for years.


The Paris Problem — and Why It's Evidence

If you have grain sensitivities, here's something that may have already happened to you — or to someone you know:

They travel to France. They eat bread every day. Croissants for breakfast. Pasta in Italy. Baguettes in Paris. And nothing happens. No bloating. No brain fog. No skin flare. They come home — and it all comes back.

This is not a coincidence. And it's not in their heads.

European countries have different regulatory frameworks around glyphosate use, GMO crops, and food fortification. Many European nations have significantly restricted or banned certain agricultural practices common in the US. Their grains are not sprayed with glyphosate as a pre-harvest desiccant. Their bread is frequently made with longer fermentation times. Their flour is often less stripped and less synthetically fortified.

The grain that caused your problem was never just grain. It was American grain — processed, sprayed, stripped, and chemically re-fortified — and your body knows the difference even if your conscious mind doesn't.


The Action Plan: How to Actually Figure Out What's Wrong

Again — this is not medical advice. This is a starting framework to explore. Work with a qualified practitioner for personalized guidance.

Step 1: Eliminate ALL grains for 1-2 weeks

All of them. Every grain. This is harder than it sounds, especially with children, but it is the most reliable and inexpensive way to determine whether grains are contributing to your symptoms.

What counts as a grain — all of them:

Most people know wheat is a grain. Fewer people realize how many other grains are in their daily diet — and that glyphosate, GMO contamination, and synthetic fortification apply across all of them.

  • Wheat — bread, pasta, flour, couscous, bulgur, spelt, kamut, farro, semolina, durum
  • Corn — corn tortillas, cornmeal, polenta, popcorn, corn chips, corn syrup products, masa
  • Oats — oatmeal, granola, oat flour, oat milk (heavily glyphosate-contaminated; often sprayed pre-harvest as a drying agent)
  • Rice — white rice, brown rice, rice flour, rice cakes, rice crackers (no gluten, but heavily treated with pesticides and fortified in many products) wild rice is actually a grass, and safe for our purposes here. 
  • Barley — barley flour, malt, malt vinegar, beer
  • Rye — rye bread, rye crackers, rye flour
  • Sorghum — sorghum flour, sorghum syrup
  • Millet — millet flour, millet-based products
  • Quinoa — technically a seed but treated as a grain; heavily pesticide-treated in conventional form
  • Buckwheat — despite the name, not related to wheat; a seed, but commonly grouped with grains
  • Amaranth — ancient grain, increasingly available

A particular note on oats: Oats are one of the most glyphosate-contaminated foods in the American diet — not because oats are GMO, but because glyphosate is commonly sprayed on conventional oat crops just before harvest as a desiccant to speed up the harvest process. The oats absorb the glyphosate directly. Independent testing has repeatedly found glyphosate in major oat-based products including Quaker Oats and many granola brands. Organic oats are better — but still subject to contamination concerns.

A note on rice and oats — they have their own gluten:

Many people believe rice and oats are gluten-free — and while they don't contain the specific gluten proteins found in wheat (gliadin and glutenin), they do contain their own analogous proteins. Oats contain avenin, rice contains orzenin — both are storage proteins in the same biological family as wheat gluten. For people with true gluten sensitivity or celiac disease, these proteins can trigger similar immune responses, which is why many practitioners recommend eliminating all grains rather than just wheat during an elimination protocol.

This is also why the "gluten-free" label on oat and rice products can be misleading — it typically means the product was processed in a facility free from wheat cross-contamination, not that the grain itself is without its own potentially reactive proteins.

People who react to rice or oats after eliminating wheat may be reacting to avenin or orzenin, to glyphosate residues, to pesticide load, or to some combination of all of these. The full elimination test removes all variables at once — which is exactly why it gives you the clearest information.

Step 2: Support your gut while you eliminate

The elimination period is a good time to actively support gut healing alongside the removal of problematic foods. Some tools worth considering — always discuss with your practitioner:

Bone broth — one of the most time-tested gut healing foods available. Rich in collagen, gelatin, glycine, and proline — compounds that support the integrity of the gut lining and help repair leaky gut. Make your own from quality grass-fed bones for the most benefit, or seek out a reputable brand without additives. Drink it daily during your elimination period.

Fermented foods — real fermented foods, not the commercial approximations we discussed. Raw sauerkraut (refrigerated, not shelf-stable), kimchi, kefir fermented for 24+ hours, traditionally made yogurt, kombucha. These introduce diverse beneficial bacteria to begin rebalancing your microbiome. Start small and increase gradually — die-off reactions are real when you first introduce fermented foods to a dysbiotic gut. Look for 'live cultures' on the label, if it's pasturized or canned, it's not a probiotic. Truly, food, not pills, are your best bet here. Although we don't fully understand why yet, whole cultured foods seed the gut better and faster than supplements.

Quality probiotics — not all probiotics are equal. Look for multi-strain formulas with Lactobacillus and Bifidobacterium strains, stored refrigerated, with meaningful CFU counts. Discuss strain selection with a functional medicine practitioner — the right probiotic for your specific dysbiosis matters more than the highest CFU number.

Reduce sugar and processed food during this period — these feed the pathogenic bacteria you're trying to crowd out. The elimination is more effective when you're not simultaneously feeding the problem.

Step 3: Reintroduce imported grain products in small amounts

If removing grains helped, don't add American grain products back first. Start with imported European grain products — pasta from Italy, flour imported from France or Germany, bread from a European bakery that uses imported flour and long fermentation.

If symptoms return: Gluten itself may genuinely be your issue. True gluten sensitivity or celiac disease should be evaluated by a healthcare provider.

If symptoms do NOT return: This is critical information. Gluten is likely not your primary problem. The glyphosate, GMO exposure, or synthetic fortification in American grains is doing the damage — not the gluten itself.

Step 4: Make permanent, practical changes

Regardless of which path your experiment reveals, these changes are worth making for everyone:

  • If you bake: Switch to King Arthur Organic flour — widely available at King Soopers, Whole Foods, Natural Grocers, and Sprouts throughout Colorado. Better still: seek out imported European flours.
  • Where to find imported grain products along the Front Range:
    • Whole Foods bulk section and specialty pasta aisle — Italian imported pasta widely available
    • Natural Grocers — often carries European imported grain products
    • Sprouts — growing selection of imported and specialty flours
    • European Deli (Denver) and similar international grocery stores — German, Italian, and Eastern European grain products
    • Pacific Ocean Marketplace (multiple Front Range locations) — Asian imported rice varieties, often less chemically treated than American rice
    • Tony's Meats & Market (multiple locations) — Italian imports including pasta and flour
    • World Market/Cost Plus — often carries European pasta, flour, and grain products at reasonable prices
    • Online: Authentic Foods, Jovial Foods (Italian-grown, imported grains), and several European flour importers ship directly
  • Read labels: Avoid products with folic acid listed as an ingredient if you suspect MTHFR issues. Look for "folate" or "methylfolate" in any supplements. Check your children's vitamins — most contain folic acid and should be switched to methylfolate-based formulas for children with any MTHFR concern. Spend extra here, your brain development and health is worth it.
  • Ferment your bread: If you bake, a long-fermented sourdough — 24 hours minimum, 48-72 hours ideally — is meaningfully different from commercially produced bread, even made with the same flour.
  • Be especially vigilant with children's food: Fortified cereals, children's vitamins, and processed grain products are among the highest sources of synthetic folic acid in the American diet. If your child has unexplained behavioral, skin, or digestive symptoms, these are worth specifically eliminating and discussing with a functional medicine pediatrician.
  • Consider MTHFR testing: It's inexpensive, often covered by insurance, and could explain years of unexplained symptoms. Ask your doctor or seek out a functional medicine practitioner who is knowledgeable about methylation.

The Gut-Brain-Skin Axis: Why All of This Shows Up on Your Skin

Your gut microbiome is not just a digestive organ. It is a regulatory system that touches virtually every aspect of your physiology.

Evidence indicates that gut microbiota modulate neurochemical pathways involving serotonin, dopamine, GABA, and glutamate, as well as immune and endocrine axes.

Your gut bacteria produce or regulate:

  • Serotonin — approximately 90% of your body's serotonin is produced in the gut. Your mood is, in a very literal sense, a gut product.
  • Dopamine — motivation, focus, pleasure, executive function
  • GABA — your primary calming neurotransmitter
  • Cortisol regulation — through the gut-brain-adrenal axis
  • Estrogen and other hormones — through the estrobolome, the collection of gut bacteria responsible for metabolizing estrogen
  • Thyroid hormone conversion — gut bacteria play a role in converting T4 to the active T3
  • Immune regulation — approximately 70% of your immune system lives in and around your gut
  • Inflammatory signaling — dysbiosis drives systemic inflammation that manifests everywhere, including your skin
  • Energy metabolism — gut bacteria produce short-chain fatty acids that are primary fuel sources for your cells
  • Cognitive function and brain fog — the gut-brain axis is bidirectional; dysbiosis contributes directly to neuroinflammation

The gut-skin axis describes the bidirectional communication between gut dysbiosis and skin homeostasis. Both the gut and skin fulfill important immunological and neuroendocrine roles, constantly adapting to environmental changes to maintain balance. Dysbiosis in one site may influence the other, potentially contributing to immune dysregulation and impaired barrier defense.
